    In a medium saucepan, combine the sugar, flour, and salt. Gradually whisk in the milk, making sure there are no lumps. Cook over medium heat, stirring constantly until the mixture thickens.

    Add Egg Yolks

    In a separate bowl, lightly beat the egg yolks. Once the pudding base has thickened, take a small amount of the hot mixture and whisk it into the egg yolks to temper them. Then, slowly add the egg yolk mixture back into the saucepan, stirring constantly until fully incorporated.

    Flavor the Pudding

    Remove the saucepan from heat and stir in the vanilla extract. Allow the pudding to cool slightly.

    Layer the Pudding

    In a serving dish, layer slices of ripe bananas, followed by the pudding. Repeat the layers until all ingredients are used, finishing with a layer of pudding on top.
