    Make the Pie Crust

    In a large mixing bowl, combine the flour, sugar, and salt. Add the cold cubed butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Divide the dough in half, form into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Prepare the Filling

    In another bowl, combine the fresh fruit, sugar, cinnamon, cornstarch, and lemon juice. Gently toss to coat the fruit evenly.

    Assemble the Pie

    Preheat your oven to 425°F (220°C). Roll out one disc of dough on a floured surface to fit your pie pan. Place the dough in the pan and fill it with the fruit mixture. Roll out the second disc of dough and place it over the filling. Trim and crimp the edges to seal. Cut slits in the top crust for steam to escape.

    Egg Wash and Baking

    Beat the egg and brush it over the top crust for a golden finish. Bake in the preheated oven for 25-30 minutes, or until the crust is golden and the filling is bubbling.

    Cool and Serve

    Remove the pie from the oven and let it cool for at least 10 minutes before slicing. Serve warm or at room temperature, optionally with ice cream or whipped cream.
