1. Prepare the Quinoa
Rinse quinoa under cold water. In a saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Remove from heat and let it sit for 5 minutes.
2. Roast the Vegetables
Preheat oven to 400°F (200°C). On a baking sheet, combine diced bell peppers, zucchini, and red onion. Drizzle with olive oil, and sprinkle with salt and black pepper. Toss to coat evenly. Roast for 20-25 minutes, or until vegetables are tender and slightly caramelized.

In a small bowl, whisk together tahini, lemon juice, and a little water to reach desired consistency. Season with salt to taste.
4. Assemble the Bowl
In a large bowl, fluff the quinoa with a fork. Top with roasted vegetables, drizzle with tahini dressing, and garnish with fresh parsley.
