Prepare Ube Puree
Peel and chop the ube into small pieces. Boil the chopped ube in water for about 15 minutes or until tender. Drain and let it cool slightly. Blend the boiled ube with a little water until smooth, creating the ube puree.
Juice the Lemons
Roll the lemons on a countertop to soften them, then cut them in half and juice them using a citrus juicer or by hand. Strain the juice to remove seeds and pulp.

In a large pitcher, combine the granulated sugar with 1 cup of warm water. Stir until the sugar is dissolved.
