Preparation of Salad Base

1. Prepare the Jackfruit

Drain and rinse the canned jackfruit. Remove the core and cut the pieces into smaller chunks. Use a fork to shred the jackfruit to resemble pulled chicken.

2. Prepare the Vegetables

Chop the romaine lettuce, slice the cherry tomatoes in half, peel and dice the cucumber, and finely chop the red onion.

3. Combine Salad Ingredients

In a large bowl, combine the shredded jackfruit, chopped romaine lettuce, halved cherry tomatoes, diced cucumber, and chopped red onion.

Making Cheesy Spinach & Artichoke Filling

4. Cook the Spinach

In a skillet over medium heat, sauté the fresh spinach until wilted. Remove from heat and let cool slightly.

5. Prepare the Filling

In a mixing bowl, combine the wilted spinach, drained and chopped artichoke hearts, cream cheese, shredded mozzarella cheese, garlic powder, salt, and black pepper. Mix until well combined.
