Seitan Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the vital wheat gluten, nutritional yeast, onion powder, garlic powder, smoked paprika, black pepper, thyme, and sage. Mix well until all dry ingredients are fully incorporated.

    Combine Wet Ingredients

    In a separate bowl, whisk together the vegetable broth, soy sauce, and olive oil until well combined.

    Form the Seitan

    Pour the wet mixture into the dry ingredients. Stir with a spoon until a dough forms. Knead the dough for about 5 minutes until it becomes elastic.

    Shape the Seitan

    Shape the dough into a turkey-like form, or into a loaf shape if preferred. Wrap the seitan tightly in aluminum foil or cheesecloth.

Cooking the Seitan

    Steam the Seitan

    In a large pot with a steaming basket, bring water to a boil. Place the wrapped seitan into the basket and cover. Steam for 30 minutes.

    Prepare Basting Sauce

    While the seitan is steaming, in a small bowl, mix together the apple cider vinegar, maple syrup, liquid smoke, garlic powder, and soy sauce.

    Baste the Seitan

    After 30 minutes, carefully remove the seitan from the steamer and unwrap. Brush the basting sauce over the seitan, ensuring it’s well coated.

    Smoke the Seitan

    Preheat a smoker or grill to medium heat. Place the seitan directly onto the grill grates or in a smoker box. Smoke for an additional 30-40 minutes, basting occasionally with the remaining sauce.
