Sauté the Vegetables
In a large skillet over medium heat, add a tablespoon of butter. Once melted, add the sliced bell peppers and onions. Sauté for about 5-7 minutes until they are soft and slightly caramelized. Remove from skillet and set aside.

Cook the Impossible Burgers
In the same skillet, add the Impossible burger patties. Cook for 3-4 minutes on each side or until they are browned and heated through. Place mozzarella cheese on top of each patty in the last minute of cooking to melt.
Assemble and Cook

Prepare the Bread
Spread mayonnaise on one side of each slice of artisan bread and mustard on the other side. The mayonnaise side will be the outside to achieve a golden crust.

Build the Patty Melt
On two slices of the bread, layer the sautéed peppers and onions, followed by the Impossible burger with melted mozzarella. Top with the remaining slices of bread, mayonnaise side out.

Grill the Sandwich
In the same skillet, add a tablespoon of melted butter. Place the assembled sandwiches in the skillet. Grill for about 4-5 minutes on each side or until golden brown and crispy. Repeat for the remaining sandwiches.
