Falafel

Prepare the Chickpeas
Drain and rinse the canned chickpeas thoroughly under cold water. Allow them to dry for a bit.

Blend Ingredients
In a food processor, combine the chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely blended but not pureed.

Add Flour
Transfer the mixture to a bowl and stir in the all-purpose flour until combined. Let the mixture sit for 30 minutes.

Shape Falafel
With wet hands, form the mixture into small balls or patties.

Fry Falafel
Heat oil in a deep pan over medium heat. Fry the falafel in batches until golden brown, about 3-4 minutes on each side. Drain on paper towels.
Tabbouleh

Prepare Bulgur
In a bowl, combine bulgur wheat and boiling water. Cover and let it sit for about 20 minutes until the water is absorbed.

Chill
Refrigerate the tabbouleh for at least 30 minutes before serving.

Grate Cucumber
Grate the half cucumber and squeeze out excess moisture using a clean cloth.

Cover and refrigerate for at least 30 minutes to allow flavors to meld.
