Crust Preparation

    Make the Dough

    In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

    Add Egg and Water

    Stir in the egg yolk and ice water until the dough comes together. If the dough is too crumbly, add more ice water, one teaspoon at a time.

    Chill the Dough

    Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

    Bake the Crust

    Preheat the oven to 350°F (175°C). Roll out the chilled dough on a floured surface and fit it into a tart pan. Prick the bottom with a fork. Bake for 15-20 minutes or until golden brown. Let it cool completely.

Cream Filling Preparation

    Make the Cream Filling

    In a mixing bowl, beat the cream cheese until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until well combined.

    Whip the Cream

    In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

    Fill the Crust

    Spread the cream filling evenly over the cooled crust, smoothing the top with a spatula.

Topping Preparation

    Prepare the Fruit

    Wash and slice the assorted seasonal fruits as desired, and arrange them on top of the cream filling.

    Glaze the Tart

    In a small saucepan, heat the apricot jam over low heat until melted. Brush the melted jam over the fruit to give it a nice glaze.

    Refrigerate the tart for about 1 hour to set. Serve chilled and enjoy!
