Vegetable Preparation

Prepare the Vegetables
Wash all the vegetables thoroughly under cold water. Peel the carrots and slice them into sticks. Cut the cucumber into rounds or sticks. Remove the seeds from the bell peppers and slice them into strips. Cut the ends off the celery and slice them into sticks. Arrange all the vegetables on a serving platter.

Make the Hummus
In a food processor, combine the drained chickpeas, tahini, minced garlic, lemon juice, olive oil, water, salt, and ground cumin. Blend until smooth, scraping down the sides as needed. If the hummus is too thick, add a little more water, one tablespoon at a time, until the desired consistency is reached. Taste and adjust seasoning as needed.

Warm the Pita
If desired, lightly toast the whole grain pita bread in a toaster or on a skillet until warm and slightly crispy. Cut each pita in half to create pockets for dipping.

Serve the Veggie Box
Arrange the prepared vegetables, hummus, and pita on a serving tray. Serve immediately and enjoy your classic veggie box!
