Rinse and Cook Rice
Rinse 1 cup of jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 1.5 cups of water. Bring to a boil over high heat.

Simmer Rice
Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the water is absorbed. Remove from heat and let it sit, covered, for an additional 10 minutes.

Prepare Tofu
Drain the firm tofu and press it between paper towels to remove excess moisture. Cut the tofu into bite-sized cubes.

Heat Oil
In a large skillet or wok, heat 2 tablespoons of sesame oil over medium-high heat.

Add Soy Sauce
Pour in 3 tablespoons of soy sauce and toss to coat the tofu evenly. Remove the tofu from the skillet and set aside.

Combine Ingredients
Return the cooked tofu to the skillet with the vegetables. Toss everything together and cook for another 2 minutes. Sprinkle with toasted sesame seeds and chopped green onions before serving.
