Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, mix olive oil, salt, black pepper, and lemon juice. Add the salmon fillets and coat them evenly. Let them marinate for at least 15 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat.

  3. 3

    Grill the Salmon

Place the marinated salmon fillets on the grill. Grill for about 5-7 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Making the Lemon Dill Sauce

  1. 4

    Combine Ingredients

In a small bowl, mix together Greek yogurt, fresh dill, lemon zest, minced garlic, salt, and black pepper until well combined.

  2. 5

    Chill the Sauce

Cover the sauce and refrigerate for at least 20 minutes before serving to allow the flavors to meld.

Preparing the Seasonal Vegetables

  1. 6

    Prepare the Vegetables

In a large bowl, combine trimmed asparagus and sliced bell peppers. Drizzle with olive oil, and season with salt and black pepper to taste. Toss to coat.

  2. 7

    Grill the Vegetables

Place the seasoned vegetables on the grill or in a grill basket. Grill for about 5-7 minutes, turning occasionally, until tender and slightly charred.
