Method
Cake Preparation
- 1
- 2
Melt Chocolate and Butter
In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
- 3
Mix Sugar and Eggs
In a large mixing bowl, whisk together granulated sugar, large eggs, and egg yolks until the mixture is pale and slightly thickened.
- 4
- 5
Add Flour
Sift the all-purpose flour over the chocolate mixture and fold gently until just combined. Be careful not to overmix.
- 6
Fill Ramekins
Evenly distribute the batter into the prepared ramekins, filling them about 3/4 full.
- 7
Bake
Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is soft.
- 8
Cool and Unmold
Remove the ramekins from the oven and let them cool for 1-2 minutes. Then, run a knife around the edges to loosen the cakes. Invert each ramekin onto a plate to unmold.
Serving
- 9
Dust with Powdered Sugar
Dust the top of each lava cake with powdered sugar for a decorative touch.
- 10
Add Ice Cream
Serve immediately with a scoop of vanilla ice cream on the side, allowing the warm cake to melt the ice cream slightly.
