Preheat the Oven
Preheat your oven to 450°F (230°C) to prepare for baking the cauliflower.

Cut the Cauliflower
Remove the leaves from the cauliflower and cut it into bite-sized florets.

Mix the Coating
In a large bowl, combine the olive oil, garlic powder, onion powder, salt, black pepper, and cornstarch. Mix well until you have a smooth coating.

Coat the Cauliflower
Add the cauliflower florets to the bowl and toss them in the coating mixture until fully coated.

Arrange on Baking Sheet
Spread the coated cauliflower evenly on a baking sheet lined with parchment paper.
Baking the Cauliflower Bites

Bake the Cauliflower
Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the cauliflower is golden brown and crispy. Make sure to flip the florets halfway through the baking time for even crisping.

Make the Buffalo Sauce
In a small saucepan over medium heat, melt the butter. Add the hot sauce, garlic powder, cayenne pepper, and honey (if using). Stir until well combined and heated through.

Toss the Cauliflower in Sauce
Once the cauliflower bites are baked, remove them from the oven and place them in a large bowl. Pour the buffalo sauce over the cauliflower and toss gently until evenly coated.
