Walleye Fingers

Method

Preparation

  1. 1

    Prepare the Walleye

Cut the walleye fillets into finger-sized strips.

  2. 2

    Set up the Breading Station

In one bowl, place the flour mixed with salt, pepper, and paprika. In a second bowl, beat the eggs and milk together. In a third bowl, combine the cornmeal with a pinch of salt.

  3. 3

    Coat the Walleye

Dip each walleye strip first in the flour mixture, then in the egg mixture, and finally in the cornmeal, ensuring an even coating.

  4. 4

    Fry the Walleye

In a large skillet, heat the vegetable oil over medium-high heat. Fry the walleye fingers in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

  5. 5

    Make the Spicy Tartar Sauce

In a small bowl, mix together the mayonnaise, dill pickle relish, hot sauce, and lemon juice. Adjust seasoning to taste.

  6. 6

    Serve

Serve the crispy walleye fingers hot with the spicy tartar sauce on the side.
