Prepare the Walleye
Cut the walleye fillets into finger-sized strips.

Fry the Walleye
In a large skillet, heat the vegetable oil over medium-high heat. Fry the walleye fingers in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

Make the Spicy Tartar Sauce
In a small bowl, mix together the mayonnaise, dill pickle relish, hot sauce, and lemon juice. Adjust seasoning to taste.
