1. Prepare the Ingredients
Lay out all your ingredients: rye bread, corned beef, sauerkraut, Swiss cheese, Thousand Island dressing, and butter.
2. Assemble the Sandwich
On two slices of rye bread, spread 2 tablespoons of Thousand Island dressing on each slice. Layer the corned beef, sauerkraut, and Swiss cheese on one slice, then top with the other slice of bread.
3. Grill the Sandwich
In a skillet or grill pan, melt 1 tablespoon of butter over medium heat. Place the sandwich in the skillet. Cook for about 3-4 minutes until the bread is golden brown and the cheese begins to melt.
4. Flip and Grill Other Side
Spread the remaining butter on the top slice of bread, then carefully flip the sandwich to grill the other side. Cook for an additional 3-4 minutes, until golden brown and the cheese is fully melted.
5. Serve
Remove the sandwich from the skillet, slice in half, and serve hot with extra Thousand Island dressing on the side if desired.
