    Activate the Yeast

    In a small bowl, combine warm water (110°F to 115°F), granulated sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Add the yeast mixture and melted unsalted butter. Mix until the dough comes together.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Pretzels

    Preheat the oven to 450°F (232°C). Divide the dough into 8 equal pieces. Roll each piece into a long rope, about 24 inches, and shape it into a pretzel.

    Baking Soda Bath

    In a large pot, bring 10 cups of water to a boil and add the baking soda. Boil each pretzel for about 30 seconds on each side, then remove and place on a baking sheet lined with parchment paper.

    Bake the Pretzels

    Sprinkle each pretzel with coarse sea salt and bake for 12-15 minutes or until golden brown.

    Serve

    Remove from the oven, and brush with melted butter. Serve warm with beer mustard and cheesy jalapeño sauce.
