Prepare the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until the batter is smooth and thick.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Cheese Curds
Working in batches, dip each cheese curd into the batter, allowing excess to drip off.

Fry the Cheese Curds
Carefully lower the battered cheese curds into the hot oil. Fry until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Serve
Serve the fried cheese curds hot with ranch and sriracha ranch for dipping.
