Rinse the raw rice and parboiled rice together 3–4 times until the water runs mostly clear. Transfer to a large bowl and add enough cold water to cover by 2 inches. In a separate small bowl, rinse the urad dal and drain. Add the fenugreek seeds to the urad dal bowl. Rinse the poha and add it to the rice bowl.

Soak the rice+poha mixture and the urad dal+fenugreek separately for 4–6 hours (or up to 8 hours) at room temperature. This softens grains and fenugreek aids fermentation and flavor.

Drain the urad dal and fenugreek, reserving the soaking water from both bowls separately. In a wet grinder or high-power blender, grind the urad dal and fenugreek first with about 1/2 cup (120 ml) of the reserved urad soaking water. Grind to a smooth, airy, slightly thick but pourable batter (about 6–8 minutes in a wet grinder; longer in a blender, adding small amounts of water as needed). Scrape down the sides occasionally.

Next, grind the rice+poha with about 3/4–1 cup (180–240 ml) of the reserved rice soaking water to a slightly grainy, smooth batter (not overly silky). The consistency should be like a slightly thick pancake batter—thinner than idli batter but thicker than crepe batter.

Combine the ground urad dal batter and rice batter in a large mixing bowl. Add additional reserved water gradually to reach a batter volume of roughly 1400–1500 ml if needed; final batter should be pourable but have body (set dosa batter is slightly thicker than standard dosa batter so it forms small thick crepes).

Stir in 2 tsp salt thoroughly. Mix the batter vigorously for 2–3 minutes using a spatula or whisk to incorporate air—this helps fermentation and yields soft, spongy set dosas.

Cover the bowl with a lid or clean cloth and leave it to ferment in a warm place for 8–12 hours (overnight). Fermentation time depends on ambient temperature: warmer climate shortens time, cooler lengthens it. The batter should rise slightly and show small bubbles and a mildly sour aroma when ready.

After fermentation, gently stir the batter once. If batter is too thin, reduce by letting it sit uncovered in the refrigerator for an hour or simmer gently in a nonstick pan to reduce (avoid overheating). If too thick, add 1–2 tbsp water and mix until the desired pourable but slightly thick consistency is achieved.

Heat a nonstick or cast-iron tawa/griddle over medium heat until hot. Sprinkle a few drops of water—if they sizzle and evaporate, skillet is ready. Reduce heat to medium-low (set dosa cooks slower to get thick, soft layers).

Lightly grease the surface with 1/2 tsp oil. Using a ladle, pour 3/4 to 1/2 cup batter (depending on desired thickness and pan size) into the center of the pan. Do not spread the batter out like a thin dosa; for set dosa you want a small, thick pancake roughly 3–4 inches (8–10 cm) in diameter or slightly larger. The batter should spread slightly on its own; you can tilt the pan gently to even it out but do not get it paper-thin.

Greasing and batter portioning

Drizzle 1/2 tsp oil or ghee around the edges and on top of the dosa. Cover the pan with a lid to trap steam; this helps the dosa cook through and develop a soft, spongy interior and slightly crisp exterior.

Cook covered for 2–3 minutes on medium-low heat (time will vary). Check after 2 minutes—edges should lift and the top should set with little visible wet batter. Flip the dosa and cook the other side for 30–60 seconds uncovered to set and lightly brown. Repeat with remaining batter, re-greasing between dosas as needed. For thicker, fluffier set dosas, use slightly more batter and cook a bit longer covered.

Transfer cooked set dosas to a plate and stack gently. Serve hot with chutney and sambar. Set dosas are traditionally soft, spongy, slightly thick discs often served in a set (two or three) with chutney and podi (gunpowder).

Serve 2–3 set dosas per person with coconut chutney and sambar or gunpowder and ghee. They are best eaten immediately while warm and soft.

Leftover batter can be refrigerated for up to 2–3 days. Cooked dosas can be briefly reheated on a skillet. If refrigerator-stored batter ferments further and becomes very sour, discard or adjust with fresh batter.

Rinse 2 cups idli/parboiled rice until water runs clear. Rinse 1 cup urad dal and 1 tsp fenugreek seeds separately. Place rice and poha together in a bowl and cover with fresh water to soak for 4–6 hours. Soak the urad dal and fenugreek in a separate bowl for 4–6 hours.

Drain urad dal and reserve soaking water. Grind urad dal and fenugreek with about 1/2 to 3/4 cup of the reserved soaking water in a wet grinder or high-power blender until a smooth, light, and fluffy batter forms (about 20–30 minutes in a wet grinder). Transfer to a large mixing bowl. Drain rice and poha and grind with remaining reserved water to a slightly coarse, smooth batter (like fine semolina). Combine rice and urad batter in the large bowl and mix thoroughly by folding or pressing with your hand to incorporate air. The combined batter should be pourable but thick (ribboning).

Grind batter

Stir in 1.5 tsp salt. Cover the bowl with a lid or cloth and keep in a warm place to ferment for 8–12 hours or overnight until it doubles in volume and has a slightly sour aroma. Fermentation time depends on room temperature: shorter in warm climates, longer if cold. After fermentation, gently stir the batter; if too thick, add 2–4 tbs water to reach pouring consistency for idlis.

Ferment

Grease idli plates lightly with ghee or oil. Pour batter into idli moulds filling 3/4 full. Heat a steamer/pressure cooker (without weight) with 1–2 cups water until boiling. Place idli plates in the steamer, cover, and steam on medium-high heat for 10–12 minutes. Check doneness by inserting a toothpick — it should come out clean. Turn off heat, let rest 2 minutes, then unmould idlis using a spoon or butter knife. Keep warm in a covered container.

Rinse 2 cups urad dal under running water until water runs clear. Soak in enough water to cover for 4–5 hours or until plump.

Drain the soaked dal well. In a wet grinder or high-power blender, grind dal with small amounts of water (start with 2–3 tbs and add only as needed) to a thick, smooth, and fluffy paste — it should be able to hold shape. Transfer to a bowl and beat the batter vigorously for 2–3 minutes to incorporate air (use the back of a spoon or a whisk).

Grind dal for vada

Add 1 tsp salt, 1/2 tsp crushed black pepper, 1/2 tsp cumin seeds, 1/4 tsp asafoetida, 2 chopped green chilies, 1 tbs grated ginger, chopped curry leaves and optional chopped onion to the batter. Mix thoroughly to distribute ingredients evenly.

Season batter

Wet your hands. Take a lemon-sized portion of batter, flatten it on your palm to a round disc with a slight depression in the center (or make a hole using thumb). Place shaped vadas on a plate dusted lightly with rice flour (optional) to prevent sticking. Repeat with remaining batter.

Shape vadas

Heat oil in a deep, heavy-bottomed pan to medium-high (about 180°C / 350°F). To test, drop a small bit of batter — it should sizzle and rise slowly. Gently slide 3–4 vadas into the oil without overcrowding. Fry on medium heat, turning occasionally, until golden brown and cooked through (about 3–4 minutes per side). Remove with a slotted spoon and drain on paper towels. Keep warm and crisp by placing in a low oven if desired.

Heat oil and fry

Serve idlis hot, optionally brushed with ghee or a few drops of sesame oil. Plate with medu vadas and offer coconut chutney and sambar on the side. For a classic combination, place idli and vada together and dunk into chutney or sambar while hot.

Peel the ripe banana and break it into 2–3 pieces so it blends easily.

If using fresh berries instead of frozen, add 4–6 ice cubes to the optional add-ins or chill ingredients beforehand.

Measure out peanut butter, flaxseed, oats, and any optional add-ins you plan to use.

In the blender jar, add the almond milk first (this helps create a smooth blend), then Greek yogurt, banana pieces, frozen mixed berries, rolled oats, peanut butter, ground flaxseed, honey (or maple), vanilla extract, and ground cinnamon. If using protein powder, spinach, chia seeds or ice, add them now.

Layer ingredients

Secure the lid and blend on low for 10–15 seconds to combine, then increase to high and blend for 30–60 seconds or until completely smooth and no large berry or oat pieces remain. Pause and scrape down the sides with a spatula if needed and blend another 10–15 seconds.

Blend

If the smoothie is too thick, add 2–4 tablespoons (30–60 ml) more almond milk and blend briefly. If it needs more sweetness, add an extra 1/2 teaspoon of honey or maple syrup and blend 5–10 seconds.

Adjust consistency & sweetness

Pour the smoothie into two tall glasses (or one large), sprinkle a pinch of cinnamon or a few extra chia seeds on top if desired, and serve immediately.

Serve

If not drinking right away, store in an airtight container in the refrigerator for up to 24 hours; shake or stir before drinking. Do not freeze after blending — texture will suffer.

Pour 2 cups of whole milk into a small saucepan. Warm gently over medium-low heat until steaming and small bubbles form at the edges (do not boil), about 4–6 minutes. Stir once or twice to prevent a skin forming and to keep the heat even.

Warm the milk

Place 4 tablespoons Horlicks powder in a heatproof mug or small bowl. Add 1/4 cup hot water (about 70–90°C) and stir briskly to form a smooth paste with no lumps. This step helps avoid graininess when mixed with milk.

Dissolve Horlicks

Pour the warmed milk slowly into the dissolved Horlicks paste while stirring continuously to combine thoroughly. Taste and add up to 1 teaspoon sugar if you prefer it sweeter. Stir in 1/4 teaspoon vanilla extract if using.

Combine and sweeten

If you prefer a stronger malt flavor, add an extra 1/2–1 tablespoon Horlicks and stir until dissolved. For a thinner drink, add 1–2 tablespoons more hot water or milk. Pour into a serving mug.

Adjust and serve

For a chocolatey variation, sift 1/2 teaspoon cocoa powder on top and whisk briefly. Sprinkle 1/4 teaspoon ground cinnamon or nutmeg for warming spice notes.

Top with 2 tablespoons whipped cream for a richer treat. Serve immediately while hot.

To make an iced version: dissolve the Horlicks in 1/4 cup hot water as above, cool to room temperature, then combine with 2 cups cold milk and pour over a tall glass filled with ice. Stir to combine and serve chilled.

Weigh 15 g of whole coffee beans on a digital scale for one 250 ml cup. Measure about 300 ml of filtered water to have extra for preheating.

Bring the 300 ml of filtered water to a boil, then remove from heat and let it cool for about 30 seconds to reach approximately 92–96°C (197–205°F). If using a kettle without temperature control, allow ~30 seconds after boiling.

Heat water

Grind the 15 g of beans to the appropriate grind size for your brew method: medium-fine for pour-over (slightly finer than table salt), coarse for French press, or fine for espresso. Use a burr grinder for consistent particle size. Grind immediately before brewing to preserve freshness.

Place a paper filter in the pour-over dripper and rinse it thoroughly with hot water to remove paper taste and preheat the vessel. Discard rinse water. Place dripper over your mug or server.

Add the ground coffee to the rinsed filter and gently shake or tap to level the bed of grounds.

Start your timer. Pour 30–40 ml of hot water evenly over the grounds to saturate them (about twice the coffee weight). Let the coffee bloom for 30–45 seconds to release trapped gases.

Bloom

After the bloom, slowly pour the remaining water in a steady spiral or concentric circles, keeping the water level consistent and avoiding pouring directly on the filter edge. Aim to finish pouring by 2:00–2:30 minutes total brew time (for pour-over), with an overall contact time of about 2:30–3:00 minutes.

Main pour

Allow the coffee to finish draining through the filter. Remove the dripper, stir the brewed coffee in the server or mug to homogenize, then pour into your cup.

Drain and serve

For French press, use a coarse grind. Add 15 g coffee to a 250 ml carafe, pour 250 ml of hot water, stir gently, place the lid with the plunger up, steep for 4 minutes, then press slowly and pour.

French press

For espresso, use about 18–20 g dose (adjust machine and basket) and yield about 30–40 ml in ~25–30 seconds with a fine grind and appropriate tamping. Equipment and technique vary; adjust to taste.

Espresso (single shot approximation)

If desired, add 30 ml milk or creamer and/or 1 tsp sugar to taste. Stir and serve immediately. Taste and adjust grind size, dose, or brew time for future brews to refine strength and extraction.

Weigh 35 grams (0.035 kg) of whole coffee beans for a 1:10 coffee-to-water ratio that yields a strong cup (approximately 350 ml brew). Adjust ratio to taste (1:15 for milder, 1:12 medium).

Measure

Bring 350 ml of filtered water to a temperature between 90–96°C (195–205°F). If you don't have a thermometer, bring to a rolling boil and let sit 30 seconds.

Grind the measured beans to a grind size appropriate for your brew method: medium-fine for pour-over, medium for drip, coarse for French press. Aim for a uniform grind.

If using paper filter or metal filter, rinse it with hot water and discard rinse water. Preheat your brew device and cup by pouring some hot water through it, then discard hot water.

Rinse filter / preheat equipment

Place ground coffee in the filter. Start a timer and pour about 70 ml of hot water (twice the weight of coffee) evenly over grounds to saturate them. Let bloom for 30–45 seconds to release CO2.

Bloom (for pour-over / drip)

After bloom, pour remaining water slowly and evenly in concentric circles until you reach 350 ml total. Aim for a total brew time of 2:30–3:30 minutes for pour-over or drip. For French press, pour all water, stir gently, steep 4 minutes, then press.

Finish pour

Once brewing is complete, give the coffee a gentle swirl to homogenize, then pour into your cup. Serve black — no milk or sugar.

Discard used grounds and rinse equipment. Clean grinder and kettle as needed.

Bring 1 cup water to a rolling boil in a small saucepan or kettle. Remove from heat, add 2 tablespoons loose black tea (or 2 strong tea bags) and let steep 3 to 5 minutes depending on desired strength (3 minutes for moderate, 5 minutes for very strong).

While the tea steeps, pour 2 cups whole milk into a separate saucepan and warm over medium-low heat until just steaming and small bubbles form at the edge (do not boil) — about 4 to 6 minutes. Stir occasionally to prevent a skin from forming.

Heat milk

Strain the steeped tea into the warm milk, pressing gently on the leaves or tea bags to extract flavor. Discard spent leaves/bags. Stir to combine.

Combine and strain

While the milk-tea mixture is still warm, add 2 tablespoons granulated sugar and (optional) 1 teaspoon honey. Stir until fully dissolved, tasting and adjusting sweetness as needed. For less sweetness start with 1 tablespoon sugar.

If using vanilla, stir 1 teaspoon vanilla extract into the sweetened milk tea now. Taste and adjust any element (tea strength, sweetness, vanilla).

For hot milk tea: pour into warmed cups and serve immediately. Optionally dust with a light sprinkle (1/4 tsp) of ground cinnamon or matcha for aroma.

Serve hot

For iced milk tea: let the milk-tea cool to near room temperature (10–15 minutes), then chill in the refrigerator 20–30 minutes or pour over 1 cup ice in a tall glass. Stir and serve with a straw.

Use 3 cups of cooked, fully cooled long-grain white rice (preferably leftover rice refrigerated overnight). Break up any clumps with your hands or a fork so the grains separate.

If rice is freshly cooked, spread on a baking sheet and chill for at least 30 minutes to dry slightly before frying.

Thinly slice scallions separating whites and greens. Mince garlic, grate ginger, and small-dice the onion. Crack two eggs into a small bowl and beat lightly with a fork.

Prep aromatics

Heat a large skillet or a wok over medium-high heat until hot. Add 1 tablespoon neutral oil and 1 tablespoon butter. Swirl to coat.

Pour in the beaten eggs and quickly scramble until just set but still moist. Transfer scrambled eggs to a plate and set aside.

Add the remaining 2 tablespoons vegetable oil to the hot wok/skillet. Add diced onion and carrots and stir-fry for 2–3 minutes until softened.

Add the scallion whites, minced garlic, and grated ginger. Stir-fry 30–45 seconds until fragrant but not browned.

Add the thawed peas and any optional cooked protein (1 cup). Stir-fry 1–2 minutes to heat through and combine ingredients evenly.

Increase heat to high. Add the cooled rice to the wok in sections, using a spatula to press and spread the rice so it contacts the hot surface. Toss and stir continuously to prevent sticking and to heat through, about 3–4 minutes.

Drizzle 2 tablespoons light soy sauce and 1 teaspoon dark soy sauce evenly over the rice. Continue tossing so the soy distributes. Taste and add up to 1/2 teaspoon kosher salt and 1/4 teaspoon white or black pepper as needed.

Return the scrambled eggs to the wok and fold them into the rice mixture along with the scallion greens.

Finish by adding 1 teaspoon sesame oil, tossing once more to combine. Remove from heat.
