Method

Podi (Spicy South Indian Powder)

Prepare and measure all podi ingredients. Break larger dried red chilies into halves, removing stems; keep seeds if you want extra heat.

Heat a heavy skillet over medium heat. Add 1 tsp oil. When hot, add fenugreek seeds and dry-roast 20–30 seconds until aromatic (careful — fenugreek burns easily).

Add urad dal and chana dal. Roast, stirring, until they turn golden brown and nutty-smelling, about 2–3 minutes.

Add coriander seeds and peppercorns. Continue toasting 1–2 minutes until coriander becomes fragrant.

Add dried red chilies and roast 1–2 minutes until chilies puff slightly and darken a shade. Watch closely to prevent burning.

Add sesame seeds and dry curry leaves, roast 30–45 seconds until sesame is lightly golden and curry leaves crisp.

Turn off heat. Spread the toasted mixture on a plate to cool completely (5–10 minutes).

Once cool, transfer to a spice grinder or clean coffee grinder. Add salt and a pinch of hing. Grind to a coarse-to-medium powder (not ultra-fine), about 20–30 seconds, stopping to scrape down as needed.

Store the podi in an airtight jar. Use 3 tbs for the recipe and keep the rest for future use (stays good for several weeks refrigerated).

Chicken & Marinade

Pat chicken pieces dry with paper towels. If using bone-in, make 2–3 shallow slashes into each piece so marinade penetrates.

In a large bowl, combine yogurt, turmeric, ginger-garlic paste, lemon juice, 1.25 tsp salt, 3 tbs podi powder and 2 tbs oil. Whisk until smooth.

Add chicken to the marinade and toss to coat evenly. Cover and refrigerate at least 1 hour, preferably 4 hours or overnight for best flavor.

When ready to cook, remove chicken from fridge 20 minutes before cooking to take the chill off.

Stovetop Pan-Fry Method

Heat a large heavy skillet or cast-iron pan over medium-high heat. Add 2 tbsp oil. When shimmering, place marinated pieces skin-side down (or larger pieces flat) in a single layer without crowding. Sear 3–4 minutes until golden brown, then flip and sear the other side 3 minutes.

Lower heat to medium-low, cover pan, and cook for 8–12 minutes (depending on piece size) until chicken is cooked through (internal temp 74°C / 165°F for white meat; 77°C / 170°F for dark). Flip once halfway and spoon pan juices over the pieces.

Alternate Oven Method

Preheat oven to 200°C (400°F). Arrange marinated chicken on a rimmed baking sheet or shallow roasting pan lined with foil. Roast 20–30 minutes (time depends on piece size) until internal temp is reached and edges are slightly crisp. For extra char, broil 2–3 minutes at the end.

Finishing & Garnish

If using stovetop method, once chicken is cooked, remove excess oil from the pan leaving about 1 tsp. Add 1 tbs ghee or butter and fresh curry leaves. Saute 30–45 seconds until curry leaves sizzle and become crisp.

Return the cooked chicken to the pan and toss gently with the ghee and curry leaves so the pieces get glossy and fragrant (or, for oven method, transfer roasted pieces to a serving pan and toss with ghee and crisped curry leaves).

Taste and sprinkle an additional 1/2–1 tsp podi or salt if desired. Garnish with chopped coriander and serve with lemon wedges on the side.

Serve hot with steamed rice, idli/dosa, or as an appetizer with flatbreads.
