Soak

Rinse rice and urad dal separately until water runs clear. In two bowls, soak rice with fenugreek seeds and poha together and soak urad dal separately. Cover and soak for 4–6 hours at room temperature (longer in cooler climates).

Grind

Drain water from urad dal and rice. Grind urad dal with about 150–200 ml of water to a smooth, slightly fluffy paste. Transfer to a bowl. Grind rice, poha and fenugreek with about 250–350 ml water to a slightly coarse but smooth batter (a few tiny rice bits are fine). Combine rice and urad batter in a large bowl, mix thoroughly with your hand (or spoon) to incorporate air. Batter consistency should be thick but pourable; add small amounts of water if too thick.

Ferment

Add 1 tsp salt and mix. Cover the bowl loosely and leave in a warm place to ferment 8–12 hours (overnight) until batter doubles in volume and has a slightly sour aroma. In cool weather, fermentation may take longer—keep in an oven with the light on or near a warm spot.

Topping & Seasoning

Prepare onions: Peel and thinly slice the onion into rings or thin half-moons. Finely chop green chilies, curry leaves, cilantro and ginger. If using tomato, dice into small pieces. Keep 1–2 tbsp of sliced onion aside for garnish if desired.

Temper (optional but recommended for extra flavor): Heat 1 tsp oil in a small pan over medium heat. Add mustard seeds and let them splutter. Add cumin seeds (if using), chopped curry leaves and a pinch of turmeric. Stir for 10–15 seconds until aromatic, then remove from heat and set aside to mix with the chopped onions and herbs.

Combine topping: In a bowl, mix sliced onions, chopped green chilies, cilantro, ginger, diced tomato (if using), reserved temper (or sprinkle mustard/cumin directly), 1/2 tsp salt, 1/4 tsp sugar (optional) and 1 tsp lemon juice. Toss well so the onion releases a bit of moisture — this helps it adhere to the batter.

Cooking

Preheat skillet: Heat a heavy nonstick skillet, cast-iron griddle or tawa over medium heat until hot. Wipe the surface lightly with a damp cloth and apply 1–2 tsp oil and spread evenly.

Adjust batter: Gently stir fermented batter. It should be slightly thicker than dosa batter but pourable. If very thick, adjust with 1–2 tbsp water. For uthappam, a ladle of batter for 6–7 inch pancakes works well.

Pour and spread: Pour about 3/4 cup (or ladle) of batter in the center of the skillet and gently spread it in a circular motion to form a 5–6 inch thick pancake — do not spread as thin as dosa; keep it thicker (about 5–7 mm to 1 cm).

Add topping: Immediately press a generous spoonful of the onion topping onto the batter, distributing onions and herbs evenly. Lightly press so toppings adhere to batter.

Cook covered: Drizzle 1 tsp oil around the edges and a little on top. Cover the pan with a tight lid and cook on medium-low for 3–5 minutes until the bottom is golden brown and the top has set. Steaming while covered ensures the center cooks through without burning.

Flip and finish: Uncover, flip carefully using a spatula. Add 1 tsp oil or butter to the cooked side and cook the other side uncovered for 1–2 minutes on medium until light golden and onions are slightly caramelized. If you prefer softer interior, after flipping cover for 30–45 seconds.

Repeat: Remove to a plate and keep warm. Repeat with remaining batter, adjusting heat as necessary and using 1–2 tsp oil per uthappam. Clean the skillet lightly between batches if toppings stick.

Serve: Serve hot with coconut chutney, tomato chutney or sambar. Optionally finish each uthappam with a small pat of butter.
