Marinate beef

Rinse and pat dry the beef cubes. In a large bowl combine lime juice, turmeric and 1 tsp salt. Toss beef in the mixture until evenly coated. Let marinate for 20–30 minutes while you prepare the rest.

Spice Blend (Perattiyath Masala)

Toast whole spices in a dry skillet over medium heat: dried red chilies, coriander seeds, cumin, peppercorns and fennel seeds. Toast until fragrant and spices darken slightly, about 2–3 minutes, shaking pan to avoid burning. Cool for 5 minutes.

Grind the toasted spices to a fine powder using a spice grinder or mortar and pestle. Set aside.

Wet Aromatics & Paste

Heat 1 tablespoon coconut oil in a medium skillet over medium heat. Add shallots and cook, stirring, until softened and lightly golden, 6–8 minutes. Add garlic and ginger and sauté 1–2 minutes until fragrant. Remove from heat and let cool slightly.

In a blender or food processor combine the sautéed shallot-garlic-ginger mixture with 2 tablespoons coconut milk. Blend to a smooth paste. If needed add 1–2 tablespoons water or more coconut milk to reach a spoonable paste consistency.

Main Cooking

Heat the remaining 3 tablespoons coconut oil in a large heavy-bottomed pot or kadai over medium-high heat. Add curry leaves and slit green chilies; fry for 30 seconds until aromatic.

Add the marinated beef to the pot in a single layer (do in batches if necessary). Brown the beef on all sides, stirring occasionally, about 6–8 minutes. Browning builds flavor — do not overcrowd the pot.

Once beef is browned, add the ground Perattiyath masala and the blended aromatic paste. Stir well to coat the meat and cook for 2–3 minutes to roast the spices and remove raw paste smell.

Add chopped tomato, the remaining 200 ml coconut milk, and 250 ml water (or beef stock). Scrape any browned bits from the bottom of the pot. Stir in 1/2 tsp sugar (optional) and the remaining 1/2 tsp salt if needed. Bring to a gentle boil.

Reduce heat to low, cover partially with a lid and simmer for 60–75 minutes, stirring occasionally, until beef is tender and sauce has thickened. If the sauce reduces too quickly, add small splashes of water to maintain a saucy consistency. For a dryer finish, simmer uncovered the last 10–15 minutes to reduce liquid.

Finishing & Garnish

Taste and adjust seasoning with salt and freshly ground black pepper. If using, stir in chopped cilantro just before serving.

Serve hot garnished with extra curry leaves and a drizzle of coconut milk if desired. Beef Perattiyath pairs well with steamed rice, ghee rice, or flatbreads.
