Prepare and marinate beef

Trim excess fat from the beef and cut into 1/2-inch strips across the grain so pieces are tender. In a bowl combine yogurt, ginger-garlic paste, turmeric, red chili powder, coriander powder, salt, and black pepper. Add the beef strips and mix thoroughly to coat. Cover and refrigerate for 30 minutes to 2 hours (longer if time allows, up to 6 hours) to tenderize and flavor the meat.

Heat oil and temper spices

Heat a large heavy skillet or wok over medium-high heat. Add the vegetable oil or ghee until shimmering. Add mustard seeds and cumin seeds; when they begin to pop (about 30 seconds) add the curry leaves and stir briefly.

Sauté onions and chilies

Add the thinly sliced onion to the hot oil. Stir and cook until the onion softens and begins to brown at the edges, about 6–8 minutes. Add the slit green chilies and continue to sauté for 1–2 minutes until fragrant.

Add tomato (optional)

If using tomato, add the chopped tomato and cook until it breaks down and releases moisture, about 3–4 minutes. This step adds moisture and a slight tang; if you prefer drier fry skip or add only a little.

Cooking the Beef

Increase heat and add marinated beef

Raise heat to medium-high. Remove the marinated beef from the refrigerator and let any excess yogurt drip back into the bowl. Add the beef in a single layer to the pan, stirring to mix with the sautéed aromatics. Spread pieces out so they contact the pan and sear for 2–3 minutes without stirring to develop browning.

Stir and continue to cook, turning the pieces so they brown evenly. Cook until beef is cooked through and most of the moisture has evaporated, about 8–12 minutes total depending on thickness. If the pan becomes too dry and the beef sticks, add 1–2 tablespoons water and deglaze the pan, scraping up browned bits.

Taste for seasoning and adjust salt or chili if needed.

Finish and serve

Sprinkle garam masala over the cooked beef and stir for 30 seconds to let the fragrance bloom. Remove from heat, stir in chopped cilantro and lemon juice. Let rest for 2 minutes, then transfer to a serving plate.

Serve hot with steamed rice, roti, or as part of a multi-course meal.
