Fish and Marinade
Rinse the king fish pieces and pat dry with paper towels. In a bowl, mix turmeric, salt, and lime juice. Rub this marinade gently over the fish pieces and set aside for 10–15 minutes while you prepare the masala. This lightly seasons the fish and helps reduce fishy odor.
Spice Paste (Masala)
Remove stems from the dry red chilies and soak them in hot water for 10 minutes to soften (if using very hot chilies, reduce quantity).
In a small pan, heat 1 tablespoon oil and lightly fry the shallots (8 pieces) until translucent and just beginning to brown—this mellows their sharpness. Add garlic and fry for 30–45 seconds until fragrant. Remove from heat and cool slightly.
Drain the softened chilies and add them to a blender along with the fried shallots and garlic, grated ginger, and tamarind paste. Add 1–2 tablespoons of water and grind to a smooth paste (or slightly coarse depending on preference). Taste for balance: it should be spicy-tangy-slightly sweet. Set aside.
Curry Base
Add curry leaves and slit green chilies; sauté briefly until curry leaves crisp and chilies darken slightly.
Add the sliced shallots (6 pieces) and sauté on medium heat until they turn soft and golden brown (about 6–8 minutes). Stir regularly to avoid burning. This forms the flavor base of the curry.
Lower heat and add the prepared spice paste to the pan. Fry the paste for 4–6 minutes, stirring often, until the raw smell disappears and oil starts separating slightly around the edges. If the paste sticks, add 1–2 tablespoons water to prevent burning.
Add turmeric powder, red chili powder, coriander powder and salt to the pan. Stir and cook for 1 minute to toast the spices gently.
Pour in 400 ml water and stir to combine. Bring the mixture to a gentle simmer (medium-low heat). Let it cook uncovered for 6–8 minutes so flavors meld and the rawness of spices cooks off.
Cooking the Fish
Gently add the marinated king fish pieces into the simmering curry in a single layer if possible. Spoon some curry over the fish but do not stir vigorously (fish can break).
Cover and simmer on low heat for 8–10 minutes, turning pieces gently once halfway through (after 4–5 minutes) so they cook evenly. Cooking time depends on thickness; king fish cooks quickly — avoid overcooking to keep it moist.
Finishing
Once the fish is almost cooked, gently pour the thin coconut milk (200 ml) into the pan and warm through on low heat for 2–3 minutes. Do not boil vigorously after adding coconut milk to prevent curdling.
If you want a richer curry, stir in the thick coconut milk (100 ml) and heat gently for another 1–2 minutes until warmed. Taste and adjust salt and tang: add up to 1 teaspoon tamarind extract if you prefer more sourness.
Turn off the heat. Drizzle 1 teaspoon coconut oil over the curry for aroma and add chopped cilantro if using. Let the curry rest for 3–5 minutes before serving — flavors will meld and fish will finish cooking in residual heat.
