Prepare the Filling

In a bowl, combine the cooked and shredded steak, pork, or chicken with salt and pepper. Mix well.

Assemble the Quesadilla

Lay one tortilla on a flat surface. Spread half of the Monterey Jack cheese evenly over the tortilla. Add half of the meat mixture on top of the cheese, then add a layer of shredded lettuce. Top with another half of the cheese and cover with a second tortilla.

Cook the Quesadilla

In a skillet, heat 1 tablespoon of olive oil over medium heat. Carefully place the assembled quesadilla in the skillet and cook for 3-4 minutes until the bottom is golden brown. Flip the quesadilla and add the remaining olive oil. Cook for an additional 3-4 minutes until the other side is golden and the cheese is melted.

Serve

Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with sour cream on the side.
