Prepare the Pork

In a bowl, season the pork shoulder with salt, pepper, and chili de arbol. Rub the spices into the meat thoroughly.

Cook the Pork

In a large pot, heat olive oil over medium heat. Add the seasoned pork and sear on all sides until browned. Add minced garlic and chopped onion, cooking until the onion is soft.

Simmer

Cover the pot and reduce heat to low. Let the pork simmer for about 2 hours, or until it is tender and easily shredded.

Prepare the Toppings

While the pork is cooking, chop the cilantro and slice the limes into wedges.

Warm the Tortillas

In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Assemble the Tacos

Once the pork is cooked, shred it with two forks. Place a generous amount of shredded pork on each tortilla, top with chopped onions, cilantro, and a squeeze of lime juice.
