    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thick slices or wedges, about 1/2 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat them dry with paper towels.

    Heat the Oil

    In a deep fryer or heavy pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the dried potato slices into the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes per batch.

    Season the Fries

    Using a slotted spoon, remove the fried potatoes and drain on paper towels. While still hot, sprinkle generously with salt, black pepper, garlic powder, and paprika.
