Prepare the batter
In a mixing bowl, combine the all-purpose flour, cornstarch, garlic powder, onion powder, salt, and black pepper. Gradually whisk in the craft beer until the batter is smooth and well combined.
Heat the oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Coat the cheese curds
Dip each cheese curd into the batter, allowing any excess batter to drip off.
Fry the curds
Carefully drop the battered cheese curds into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes per batch.
Drain and serve
Using a slotted spoon, remove the fried cheese curds from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with ranch dressing for dipping.
