Prepare Burger Patties

Mash Black Beans
In a large bowl, mash the cooked black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

Mix Ingredients
Add breadcrumbs, chopped onion, minced garlic, cumin, chili powder, salt, black pepper, and olive oil to the mashed beans. Mix thoroughly until combined.

Add Egg
In a small bowl, beat the egg (or prepare flaxseed egg by mixing 1 tablespoon of flaxseed meal with 3 tablespoons of water and letting it sit for 5 minutes) and add it to the mixture. Stir until well incorporated.

Form Patties
Divide the mixture into two equal portions and shape them into patties. Make sure they are compact to hold together during cooking.

Chill Patties
Place the patties on a plate and refrigerate for at least 30 minutes to help them firm up.
Cook Burger Patties

Heat Oil
In a large skillet, heat a tablespoon of olive oil over medium heat.

Cook Patties
Once the oil is hot, add the patties to the skillet. Cook for 4-5 minutes on each side or until they are golden brown and heated through.
Assemble and Serve

Prepare Toppings
While the patties are cooking, slice the avocado and tomato, and gather the salsa and lettuce leaves.

Toast Buns
Optionally, you can toast the burger buns in the skillet for a minute or two until lightly golden.

Assemble Burger
On the bottom half of each bun, place a lettuce leaf, followed by a black bean patty, slices of avocado, tomato, and a generous spoonful of salsa. Top with the other half of the bun.

Serve the veggie burgers warm with any remaining salsa on the side.
