Method
Prepare the Cauliflower

Preheat the Oven
Preheat your oven to 425°F (220°C).

Cut the Cauliflower
Remove the leaves and stem from the cauliflower head, and cut it into bite-sized florets.

Season the Cauliflower
In a bowl, combine cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, salt, and black pepper. Toss well to coat.

Roast the Cauliflower
Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until crispy and golden, tossing halfway through.

Make the Cilantro Lime Sauce

Blend the Sauce
In a blender or food processor, combine Greek yogurt, fresh cilantro, lime juice, garlic clove, and salt. Blend until smooth and creamy.
Assemble the Tacos

Warm the Tortillas
Warm corn tortillas in a skillet over medium heat for about 30 seconds on each side, or until pliable.

On each tortilla, add a generous amount of roasted cauliflower, a dollop of mashed avocado, and a sprinkle of shredded cabbage.

Top each taco with cilantro lime sauce and serve with lime wedges on the side.
