Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it is hot enough to crisp the fries.

Prepare Sweet Potatoes
Wash and peel the sweet potatoes. Cut them into even sticks, about 1/4 inch thick, to help them cook uniformly.

Season the Fries
In a large bowl, toss the sweet potato sticks with olive oil, salt, paprika, garlic powder, and black pepper until well-coated.

Bake the Fries
Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes or until they are golden brown and crispy, flipping halfway through.
Spicy Aioli

Combine Ingredients
In a medium bowl, combine the mayonnaise, Sriracha sauce, lemon juice, and minced garlic clove.

Mix Well
Stir the mixture until all ingredients are well combined and the aioli is smooth. Taste and add salt as needed.

Serve
Transfer the spicy aioli to a serving bowl and serve alongside the sweet potato fries.
