Fried Catfish

Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels.

Marinate
Soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

Prepare the Coating
In a bowl, mix together cornmeal, flour, Cajun seasoning, salt, and black pepper.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until hot.

Coat the Fish
Remove the fillets from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring a thorough coating.

Fry the Fish
Carefully place the coated catfish fillets into the hot oil. Fry for about 5-7 minutes on each side or until golden brown and cooked through.

Remove the fillets from the oil and place them on a plate lined with paper towels to drain excess oil.

In a large bowl, combine cornmeal, flour, baking powder, sugar, and salt.

Using a spoon, drop small balls of batter into the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
Coleslaw

In a large bowl, combine shredded cabbage and grated carrots.

In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.
