Fried Catfish

Method

Fried Catfish

  1. 1

    Prepare the Catfish

Rinse the catfish fillets under cold water and pat them dry with paper towels.

  2. 2

    Marinate

Soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

  3. 3

    Prepare the Coating

In a bowl, mix together cornmeal, flour, Cajun seasoning, salt, and black pepper.

  4. 4

    Heat the Oil

In a large skillet, heat vegetable oil over medium-high heat until hot.

  5. 5

    Coat the Fish

Remove the fillets from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring a thorough coating.

  6. 6

    Fry the Fish

Carefully place the coated catfish fillets into the hot oil. Fry for about 5-7 minutes on each side or until golden brown and cooked through.

  7. 7

    Drain

Remove the fillets from the oil and place them on a plate lined with paper towels to drain excess oil.

Hush Puppies

  1. 8

    Mix Dry Ingredients

In a large bowl, combine cornmeal, flour, baking powder, sugar, and salt.

  2. 9

    Add Wet Ingredients

Add the finely chopped onion, beaten egg, and milk to the dry ingredients. Stir until well combined.

  3. 10

    Heat the Oil

In a separate pot or deep fryer, heat the vegetable oil over medium heat.

  4. 11

    Fry the Hush Puppies

Using a spoon, drop small balls of batter into the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Coleslaw

  1. 12

    Prepare the Vegetables

In a large bowl, combine shredded cabbage and grated carrots.

  2. 13

    Mix Dressing

In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

  3. 14

    Combine

Pour the dressing over the cabbage and carrots. Toss well to combine.

  4. 15

    Chill

Cover and refrigerate the coleslaw for at least 30 minutes before serving to allow flavors to meld.
