    Prepare the Eggs

    Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat.

    Boil and Cool

    Once boiling, cover the saucepan with a lid and remove it from heat. Let the eggs sit in the hot water for 12-14 minutes. Afterward, transfer the eggs to an ice bath for 5-10 minutes to cool completely.

    Peel the Eggs

    Once the eggs are cool, gently tap each egg on a hard surface to crack the shell, then peel under cool running water to make it easier.

    Make the Filling

    Slice each egg in half lengthwise and remove the yolks. In a mixing bowl, mash the yolks with mayonnaise, Dijon mustard, white vinegar, paprika, salt, and black pepper until smooth.

    Add Spice

    If desired, add hot sauce to the yolk mixture and mix well to incorporate.

    Fill the Eggs

    Spoon or pipe the yolk mixture back into the egg white halves.

    Garnish

    Sprinkle the filled eggs with additional paprika and garnish with chopped chives or parsley.
