Preparation
- 1
Prepare the chicken
Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and black pepper.
- 2
Bread the chicken
Set up a breading station: place the flour in a shallow dish, beat the eggs in another shallow dish, and place the breadcrumbs mixed with grated Parmesan cheese in a third dish. Dredge each chicken breast in flour, dip it into the beaten eggs, then coat it with the breadcrumb mixture.
Cooking
- 3
Fry the chicken
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
- 4
Assemble the Chicken Parmesan
In a baking dish, spread half of the marinara sauce on the bottom. Place the fried chicken breasts on top of the sauce, and then top each piece with the remaining marinara sauce. Sprinkle shredded mozzarella cheese over the top.
- 5
Bake
Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
Serving
- 6
Garnish and serve
Remove from oven and let cool for a few minutes. Garnish with fresh basil leaves and serve hot with pasta or a side salad.
