    Prepare the Steak

    Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes. Season both sides with salt and black pepper.

    Cook the Steak

    Heat olive oil in a cast-iron skillet over high heat until shimmering. Add the steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes before slicing.

Frites

    Prepare the Potatoes

    Peel and cut the russet potatoes into thin fries. Rinse under cold water to remove excess starch, then pat dry with paper towels.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove from oil and drain on paper towels. Season with salt while hot.

Chimi Sauce

    Make the Chimi Sauce

    In a food processor, combine parsley, cilantro, garlic, red wine vinegar, olive oil, salt, and black pepper. Pulse until well blended but still slightly chunky. Adjust seasoning to taste.

Seasonal Vegetable

    Prepare the Asparagus

    Trim the tough ends of the asparagus. Toss with olive oil, salt, and black pepper.

    Cook the Asparagus

    In a skillet, sauté the asparagus over medium heat for about 5-7 minutes until tender-crisp. Remove from heat.
