Snapper Cakes Preparation

    Cook the Snapper

    In a saucepan, add water and bring to a boil. Add the snapper fillets and cook for about 10 minutes or until the fish is opaque and flakes easily with a fork. Remove from heat and let cool.

    Prepare the Mixture

    Once cooled, flake the snapper into a mixing bowl. Add breadcrumbs, chopped green onions, mayonnaise, beaten egg, Dijon mustard, Old Bay seasoning, salt, and black pepper. Mix until well combined.

    Form the Cakes

    With your hands, shape the mixture into small patties (about 2-3 inches in diameter). Place the formed cakes on a baking sheet lined with parchment paper.

    Chill the Cakes

    Refrigerate the cakes for at least 30 minutes to help them hold their shape while frying.

    Fry the Cakes

    In a skillet, heat oil over medium heat. Once hot, add the snapper cakes and cook for 4-5 minutes on each side or until golden brown. Remove and place on a paper towel to drain excess oil.

Comeback Sauce Preparation

    Combine Ingredients

    In a bowl, mix together mayonnaise, ketchup, horseradish, Worcestershire sauce, hot sauce, lemon juice, garlic powder, salt, and black pepper until smooth.

    Chill the Sauce

    Cover the sauce and refrigerate for at least 30 minutes to allow the flavors to meld together.
