Jalapeño-Grapefruit Mignonette

Preparation of Oysters

Chill Oysters
Place the fresh raw oysters on a bed of crushed ice in a shallow bowl or platter to keep them chilled while you prepare the mignonette.

Shuck Oysters
Using an oyster knife, carefully shuck each oyster, discarding the top shell and keeping the oyster and its juices intact in the bottom shell. Place the shucked oysters back on the ice.

Combine Ingredients
In a small bowl, combine the fresh grapefruit juice, red wine vinegar, finely chopped jalapeño pepper, minced shallot, salt, and freshly ground black pepper.

Mix Well
Stir the mixture well to ensure all ingredients are evenly combined.

Chill
Let the mignonette sit in the refrigerator for at least 15 minutes to allow the flavors to meld together.
Serving

Serve Oysters
Arrange the chilled oysters on a serving platter, and drizzle the jalapeño-grapefruit mignonette over each oyster or serve it on the side.
