Prepare the Pork Belly

1. Seasoning the Pork

Begin by preheating your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Rub the pork belly all over with salt, black pepper, and Tajin seasoning, ensuring it is well coated.

2. Roasting the Pork

Place the seasoned pork belly on a baking sheet lined with parchment paper, skin side up. Roast in the preheated oven for about 2 to 2.5 hours, or until the skin is crispy and the meat is tender.

Citrus Marinade

In a bowl, combine the orange juice, lime juice, and guava paste. Whisk together until the guava paste is fully dissolved. Set aside.

4. Marinating the Pork

Once the pork belly is done roasting, remove it from the oven and allow it to rest for about 10 minutes. Pour the citrus marinade over the pork belly, ensuring it is well coated. Let it marinate for another 10-15 minutes.
