Method
Braised Beef Short Ribs

Preheat Oven
Preheat your oven to 300°F (150°C) for braising the short ribs.

Season Ribs
Season the beef short ribs with salt and black pepper on all sides.

Add Garlic
Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.

Braise
Return the short ribs to the pot, add thyme and bay leaves. Cover and transfer to the oven.

Cooking Time
Braise in the oven for 3 hours until the meat is tender and falling off the bone.

Rest Ribs
Remove the ribs from the pot and let them rest for a few minutes before serving.
Roasted Carrot Hummus

Preheat Oven
Preheat the oven to 400°F (200°C).

Roast Carrots
Toss the chopped carrots and unpeeled garlic cloves in olive oil and spread them on a baking sheet. Roast for 25-30 minutes until tender.

Adjust Consistency
Process until smooth, adding water as needed to reach desired consistency.
Rapini

Blanch Rapini
In a large pot, bring salted water to a boil. Blanch the rapini for 2-3 minutes until bright green and tender.

Ice Bath
Remove rapini from the pot and plunge into an ice bath to stop cooking. Drain and set aside.

Sauté Garlic
In a skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for 1-2 minutes.

Finish Rapini
Add the blanched rapini to the skillet and sauté for 3-5 minutes until heated through. Season with salt to taste.
Demi Glace

Reduce Sauce
Reduce the mixture by half, about 20-25 minutes, until slightly thickened.

Remove bay leaf and thyme sprigs before serving.
