Chicken

Prepare the Chicken
In a small bowl, mix paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create the dry rub. Rub the mixture all over the chicken breasts.

Cook the Chicken
In a skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from heat and let rest.
Fried Mac & Cheese

Cook the Pasta
In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Prepare for Frying
Let the mac and cheese mixture cool slightly, then form into small balls. Dip each ball into beaten eggs and roll in bread crumbs until fully coated.

Fry the Mac & Cheese Balls
In a deep skillet, heat oil over medium-high heat. Fry the mac and cheese balls in batches until golden brown. Remove and drain on paper towels.
Corn Succotash

Sauté Vegetables
In a skillet, heat olive oil over medium heat. Add diced red bell pepper and zucchini, cooking until softened, about 3-4 minutes.

Add Corn
Stir in sweet corn, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally. Remove from heat and sprinkle with fresh parsley.
