Preparation Instructions
Prepare the Lemons
Wash the lemons thoroughly to remove any wax or pesticides. Using a vegetable peeler, carefully peel the lemons, avoiding the white pith as much as possible.
Make the Simple Syrup
In a saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar has completely dissolved. Remove from heat and let cool.
Combine and Strain
After 1 to 2 weeks, strain the lemon-infused alcohol through a fine mesh strainer or cheesecloth into a clean bottle. Discard the lemon peels. Add the cooled simple syrup to the lemon-infused alcohol and stir well.
Bottle and Chill
Transfer the Limoncello into bottles, seal them, and refrigerate. Allow the Limoncello to chill for at least 24 hours before serving.
