Roast the Garlic

Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and roast for 30-35 minutes, until soft. Let cool, then squeeze out the garlic into a bowl.

Mix the Ice Cream Base

In a blender or food processor, combine the heavy cream, whole milk, sugar, roasted garlic, vanilla extract, and salt. Blend until smooth.

Chill and Churn

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes. Transfer to a container and freeze for at least 4 hours.

Prepare the Chocolate Sauce

In a saucepan over medium heat, combine the semisweet chocolate chips, heavy cream, and butter. Stir until the chocolate is melted and the mixture is smooth. Remove from heat and stir in vanilla extract.

Scoop the garlic ice cream into bowls and drizzle with warm chocolate sauce before serving.
