    Prepare the Filling

    In a skillet over medium heat, melt 1 tablespoon of butter. Add the diced onion and bell pepper and sauté until softened, about 5 minutes. Add the smoked pork and cook for an additional 2-3 minutes. Remove from heat and set aside.

    Prepare the Egg Mixture

    In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    Cook the Omelet

    In the same skillet, add the remaining tablespoon of butter and heat over medium-low heat. Pour in the egg mixture and cook gently, lifting the edges to allow uncooked eggs to flow underneath. Cook until the eggs are almost set but still slightly runny on top.

    Add Filling and Cheese

    Evenly distribute the pork and vegetable mixture over one half of the omelet. Sprinkle the shredded cheddar cheese on top of the filling.

    Fold and Serve

    Carefully fold the omelet in half over the filling and cook for another minute to allow the cheese to melt. Slide the omelet onto a plate and serve hot.
