    Prepare the Smoked Pork

    If not already cooked, smoke the pork shoulder until tender and easily pulled apart. This can take several hours depending on the smoking method. Once cooked, shred the pork and set aside.

    Cook the Eggs

    In a skillet, melt the butter over medium heat. Crack the eggs into the skillet, and season with salt and black pepper. Cook to your preferred doneness (sunny-side up, over-easy, etc.). Remove from heat.

    Toast the Bread

    While the eggs are cooking, toast the bread slices to your liking.

    Assemble the Dish

    On each plate, layer a generous portion of the smoked pork, top with eggs, and serve with the toasted bread on the side.
