Prepare the Pork
Trim excess fat from the pork shoulder and pat it dry with paper towels. Rub salt, black pepper, paprika, and cayenne pepper all over the meat.

Sear the Pork
In a large skillet, heat the olive oil over medium-high heat. Sear the pork on all sides until browned, about 3-4 minutes per side. Remove from heat.

Prepare the Slow Cooker
Place the chopped onion and minced garlic in the bottom of the slow cooker. Add the seared pork shoulder on top.

Mix the Sauce
In a bowl, combine BBQ sauce, apple cider vinegar, and brown sugar. Pour this mixture over the pork in the slow cooker.

Cook
Cover and cook on low for 8-10 hours or high for 4-6 hours, until the pork is tender and easily shreds with a fork.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix with the sauce.
