    Make the Pancake Batter

    In a mixing bowl, combine the flour, baking powder, sugar, and salt. Whisk until well combined. In another bowl, whisk together the milk and melted butter. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

    Cook the Pancakes

    Heat a non-stick skillet or griddle over medium heat and add a little oil or butter. Pour 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown. Repeat with remaining batter.

    Cook the Egg

    In the same skillet, add a little more oil or butter if necessary. Crack the egg into the skillet and cook to your desired doneness (sunny-side up, over-easy, etc.). Season with salt and pepper to taste.

    Serve the pancakes stacked on a plate with the cooked egg on top or alongside. Add maple syrup or toppings of your choice.
