    In a saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 1 teaspoon of salt. Reduce heat to low and cook, stirring occasionally, until thickened (about 15-20 minutes). Stir in butter and adjust seasoning with salt and pepper to taste.

    Poach the Eggs

    Fill a large pot with water and bring to a gentle simmer. Crack each egg into a small bowl. Create a gentle whirlpool in the water with a spoon and gently slide the eggs into the center. Cook for 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and set aside.

    Toast the English Muffins

    Split the English muffins in half and toast until golden brown.

    Assemble the Dish

    Place a toasted English muffin half on a plate, top with a poached egg, and drizzle with hollandaise sauce. Serve with a side of grits or home fries, or replace the muffin with a southern-style biscuit.
