    Prepare the Pork

    In a large pot, add the cubed pork and cover it with water. Bring to a boil over medium-high heat, then reduce to a simmer and cook for about 1 hour, or until the pork is tender.

    Add Ingredients

    Add the chopped onion, minced garlic, coarse red chile powder, and dried oregano to the pot. Stir well to combine.

    Combine with Broth

    Pour in the chicken broth and add the nixtamal corn. Season with salt and pepper to taste. Bring the mixture to a boil, then reduce to a simmer.

    Simmer

    Let the posole simmer for another 30-40 minutes, allowing the flavors to meld and the pork to become tender.

    Serve

    Ladle the posole into bowls and serve hot with lime wedges and chopped cilantro on the side.
