Instructions
- 1
Prepare the Green Beans
Bring a large pot of salted water to a boil. Add the fresh green beans and blanch for about 3-4 minutes until they are bright green and tender-crisp. Drain and immediately transfer them to a bowl of ice water to stop the cooking process.
- 2
Make the Marinade
In a separate bowl, whisk together the olive oil, red wine vinegar, minced garlic, chopped parsley, dried oregano, salt, and black pepper until well combined.
- 3
Combine Ingredients
Once the green beans are cool, drain them from the ice water and pat dry with a clean towel. Place the green beans in a large bowl and pour the marinade over them. Toss to coat the beans evenly.
- 4
Let it Marinate
Cover the bowl with plastic wrap and let the green beans marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.
- 5
Serve
To serve, arrange the mixed leafy greens on a platter, top with the marinated green beans, and scatter the halved cherry tomatoes on top. Drizzle with any remaining marinade if desired.
