Prepare the Filling
In a mixing bowl, combine the shredded cheese and chopped onion. Set aside.

Assemble the Enchiladas
Preheat your oven to 350°F (175°C). Take one blue corn tortilla, place a generous amount of the cheese and onion mixture in the center, and roll it up tightly. Repeat with the second tortilla.

Add the Sauce
Place the rolled tortillas in a baking dish. Pour the red chile sauce evenly over the top, ensuring the tortillas are well covered.

Bake
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

Serve the enchiladas hot, alongside a cup of cooked pinto beans and a cup of posole. Enjoy!
